The other side dish that I made was this Awadhi Dum Bhindi. I saw this in
Rajani's post and she had adapted it from
here. Though this is a regular subji made all over India, the Dum process might bring out different flavours.
I enjoyed it with Lacha Paratha.
Ingredients Needed
Lady's finger / Okra - 1/2 Kg
Tomatoes - 2 medium
Capsicum - 1/2 cup
Onions - 2 medium
Chilli powder - 1 tsp
Turmeric powder a pinch
Oil
Salt to taste
How to make Awadhi Dum Bhindi
Wash and wipe the Okras, let it dry for a while. Then chop into 2 inch pieces.
Heat a non stick pan with oil, saute the Bhindi till its slightly cooked. Remove and keep it aside.
then in the same pan, saute onions, add tomatoes, capsicum pieces and simmer.
Add the fried okras and mix well. Now add salt, turmeric powder, chili powder and cover with a tight lid. You could also keep a charcola on top or cover with chapati dough for the dum effect.
