Eggless Vanilla Sponge Cake with Condensed Milk and Cola ~ Egg Substitutes in Baking

Next in the series is another Sponge Cake made with Condensed Milk and Aerated Cola. Making eggless cakes with condensed milk and aerated colas were my very first exposure to baking eggless. I have been making this cake since I was in college and it never fails.

And it wasn't a sponge cake that I make, it was always the Black Forest cake from Milkmaid. I used to go all the way by making the icing and all other frills that come with that cake. Everybody used to love that cake and though the final cake used to weigh about a kilo, it used to simply disappear within minutes of frosting.

When it is chocolate cake, you can use Pepsi or Coke. I have always used coke, though none at home prefer coke and always want pepsi. I have not till date tasted either of these. Infact only recently I tasted an aerated drink. And didn't like it much.

In today's recipe I have used lemon flavoured aerated cola, though I didn't taste the drink, kids loved the drink as well. The cake came out super soft and spongy. Just like the other Sponge Cake that I made with Apple Cider with condensed Milk, this uses Aerated cola with Condensed Milk. While in other recipe, the liquid is compensated with Milk, I have compensated with aerated water in today's recipe.

So on comparing the taste, the other sponge cake will be more richer as it as condensed milk plus milk. While today's recipe will be more milder and lighter as well. Also how much time you soften the butter matters to the final result. If the butter is just soft enough to get blended is right texture, else the cake will be more dense.

Another factor to remember in such batters when using creaming technique would be to use 75% dry ingredients in the first mix. This way the creamed butter would cover the flour right away and you will also avoid over mixing later.

This was yet another cake that my kids loved, dispite of it being Vanilla.



Eggless Vanilla Sponge Cake with Condensed Milk and Aerated Cola

Ingredients Needed

All purpose Flour - 1 cup
Butter - 1/4 cup
Condensed Milk - 200 gm / 1/2 tin
Baking powder- 1 tsp
Cooking Soda 1/2 tsp
Aerated Cola - 1 cup
Vanilla Extract - 1/2 tsp

How to make Eggless Vanilla Sponge Cake 

Keep the butter at room temperature till it softens a bit, but still hard enough to hold shape and get blended. Using a beater, beat the butter and then add condensed milk. Again beat till you get a creamy mix.

Sift the flour with baking powder, baking soda and keep it aside.

To the liquid add 3/4 cup flour, 3/4 cup cola and gently blend in to mix well.

Then add the remaining quantity and combine. do not over beat.

Pre heat oven at 170 C.

Grease and dust a 8" square baking tray. Ensure the extra flour is removed

Pour the batter into the tray. The consistency is dropping state, gently pat it down using the spatula or pat it down.

Bake the cake for 30 minutes or until a tooth pick comes out clean.

Remove from oven and let it cool for 5 minutes.

Invert on to the wire rack and allow it to cool completely before slicing.
