For the second day of doing Beat the heat theme, I wanted to make something with Chocolate. I was out with ideas, wondering what to do. Then while checking out some interesting breads at
Priya Srinivasan's space, I happen to see this Chocolate Coconut Popsicle, I decided I must make it and check out if my boys will like it or not.
They haven't tasted Coconut milk on its own other than being used in gravies. So I was hoping the chocolate will take care. Just as I thought, all three loved it and even fought over who gets which shape!
Do remember to drop in those dark chocolate chips, even though this recipe says two ingredients. I added them in the bottom so that it comes out first and then randomly dropped after filling it up.

Dark Chocolate Coconut Milk Popsicle
Ingredients Needed:
Milk Chocolate Chunks - 1 cup
Thick Coconut Milk - 1 cup
Dark Chocolate Chips for garnish
How to make Dark Chocolate Chip Coconut Milk Popsicle
Chop the milk chocolate chunks into small pieces, MW for a minute. Remove and temper well.
Extract thick coconut milk from 1 & 1/2 cups coconut meat, using 1 cup water. Strain well to extract all the milk.
Once the milk chocolate is completely add the coconut milk slowly, while you keep stirring well to mix in.
The mix will start to clamp together, so whisk it well and make a smooth blend.
Fill the mix into the popsicle mould, freeze it till it sets.
