Capsicum Rice | Bell pepper rice
Cooked Rice - 3 cups
Onions - 1 medium
Capsicum - 1 big
Bay leaf - 1
Clove - 2 nos
Cinnamon - 1"
Salt to taste
Oil - 2 tsp
Masala to be ground
Chana Bal / Bengal Gram - 2 tsp
Urad dal - 2 tsp
Coriander seeds - 1 tsp
Dry Red Chili - 4 nos
How to make the Capsicum Rice
Wash, soak and cook the rice. Keep it aside.
Dry roast the masalas and cool. Once cool, grind to a smooth powder. Keep it aside.
In a non stick pan, heat the oil. Saute the bay leaf, clove, cinnamon. Now add the onion julienne.
Once the onions turns colour, add the capsicum. Add salt, turmeric powder. Cover with lid and simmer for 10 mins, till the capsicum is cooked and soft.
Now add the cooked rice, mix well. Then add the ground powder. Mix well.
Serve with onion raitha..
