Eggless Dark Chocolate Cake with Almond Flakes

>>  Friday, October 11, 2013

For the second day of baking Eggless Cakes, I wanted to try Flax seed meal. Couple of years back when I started my baking again, I struck with eggless bakes. That in turn led me read more on eggless baking and I read so much about how Flax seeds make you bake without eggs. I even bought packets of flax seeds so many times, only for it to rot in my freezer, finally to be dumped away.

During one of our chats, Champa told me that if I stored it in freezer it would easily stay over a year. I was upset on my wasted goods. Anyway since knowing this, I had again stocked up with enough flax seed meal and have been ever since wanting to try. I remember reading that a fruit cake or a nut cake will balance out the flax seed taste in your cake. However I wasn't prepared and had to do with whatever reference came up. I remembered this cake that Priya had sent for one of the events and wanted to try it out. So I tried her Chocolate Almond Flax seeds cake.

The only mistake I seem to be making each time is forgetting to grease the bottom with butter paper. It will surely make my life so much better. I baked this late in the night and finally left to stay in the oven. When I tried removing the cake, it would budge out. So clicked pictures in the pan itself. In the morning when I sliced it out and gave it to the kids, I completely forgot to click a sliced piece. I took for my colleagues as well. Only when I was looking at the cake I realized that I forgot about clicking a closeup shot.

The cake had a beautiful colour, dark violet types, with crumble just right. Again the sweet was just right and I was glad that kids liked it. Maybe because this was dark chocolate and it made it right, they didn't expect any frosting on top. I infact had a Ganache ready to adorn the top. I skipped hoping to use it for something else.

Now let's just proceed to check it out ok.

Eggless Dark Chocolate Cake with Almond Flakes

In another bowl, beat together the olive oil, sugar and whisk until the sugar gets dissolved, add the milk, hot water to the mixture and combine everything together.

For the flax seed meal, add the hot water and let it froth. Add this to the wet ingredients.

Melt the chocolate for 30 secs in MW and whisk well. Once it is melted well, add to the wet ingredients.

Gradually add the flour and almond flakes to the wet ingredients by adding a little bit at a time till the flour is used up.

Pre heat the oven at 185 C,

Grease a mould and pour the batter, sprinkle few almond flakes over the batter and bake for nearly 30 - 35 minutes. Check if knife inserted comes out clean.
