Green Chutney, Imli Chutney, Chilli Garlic Chutney ~ Chutneys for Chats

When I made Bun Samosa, I saw that I had to make the chat chutneys all over again. Because these were differently made from what I normally make. I know it must just be just an ingreidnet or two different. Yet it was different. I adapted the Bun Samosa from Vaishali and these chutneys are also from her.

It just goes to show how many different variations we can have for these simple chutneys that peps up those tangy, tantalizing Chats. I wanted to have a separate post as to record them as otherwise they just get lost!

Being a Sunday, I had plans for making new things, hopefully they should work out as expected.

 





Green Chutney

Ingredients Needed

Coriander leaves - 1 cup
Green chillies - 4
Onions - 1 medium
Garlic - 4 cloves
A small piece of ginger
Lemon juice - 2 tbsp
Salt to taste

Grind into a fine paste.

Sweet chutney

Tamarind / Imli - 1/2 cup soaked
Jaggary - 2 tbsp
Red Chili powder - 2 tsp
Jeera powder - 1 tsp
Hing a pinch
Salt to taste

How to make the Chutney

Wash the tamarind well and MW for 5 mins. Once done, add grated jaggary and MW again for 2 mins.

Allow it to cool, squeeze well and strain. Add the spice powders and bring to boil on stove top till you get a thick chutney.

Cool and serve with chats

Chilli Garlic Chutney

Whole dry red chillies - 10
Garlic - 10 - 12 cloves
Oil - 2 tsp

Add all the ingredients and make a paste using very little water.
