For Indian Cooking Challenge this month, I was pretty late and almost after August I decided on the challenge and picked up couple of recipes from the Marwari cuisine. Initial thought of being part of Haryana Cuisine, on further read up it was obvious that these rotis were made across most North states.

When we talk about States of India, as how all of the south states are clubbed into one and referred as South India, with the same blanket assumption that all habits, including food are common among all the four south states. Likewise for us from here, all the different states are referred as North India. So imagine my shock when a Bihari colleague of mine, said she wasn't aware something from Western parts of India and she said they have no chance of knowing it as it's so much farther from their place.
Well that made me realise that I still have so many states to cover and here I was, only cooking up from handful of states over and over again. So having decided that and with time being so short, I thought I would pick up these Indian Breads. Though these were not that much of a challenge, considering this is supposed to be a challenge. Yet this pushed me to make these at home and trust me, the reaction from hubby dear after the very first bite, was enough to prove these turned out great!

I will be posting the second choice later. I really don't think I can crowd too many recipes in one post.


I decided to do first the Besan Ki Masala Roti is adapted from Sanjeev Kapoor.

Besan Ki Masala Roti

From Marwari Vegetarian Cooking

Ingredients Needed

For roti

Gram flour / Besan - 1 cup
Whole Wheat Flour / Atta - 1/2 cup
Salt to taste
Ghee - 2 tbsp

For masala filling

Cumin powder - 1 1/2 tsp
Coriander powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Green chilli paste - 1/2 tsp
Salt to taste
Dry mango powder / Amchur - 1/2 tsp
Red chilli powder ; ;1/2 tsp
Pure ghee - 1& 1/2 tbsp

How to make the Besan Ki Masala Roti

In a bowl, combine all the ingredients for the masala filling. If the ghee is not enough you can add little oil to make the paste little runny.

For the dough, combine all the ingredients, knead into a soft dough using water as required.;

Divide the dough in eight portions and make balls. Roll out each ball into a four inch disc and place one tsp portion of the masala filling on to it.;

Fold into half and thenagain in half to make a triangle. Roll out again to make a triangular roti.;

Repeat the same with the remaining portions. Heat a tawa and fry each roti with a little ghee till both sides are golden brown. Apply a little ghee and press it gently between your palms.

Serve hot with pickel and curds


Notes:

After kneading the dough tends to be very sticky, so you may have to add on more wheat flour to get it not sticky.

Also the ghee if it's not liquid will not make the masala spread, so you can add oil to make it smooth and to spread.
